Mediterranean Black Bean Spaghetti

This colourful dinner dish is bursting with aromatic flavours that will leave you wanting more!


-    NZProtein Black Bean Spaghetti
-    Coconut oil
-    Black olives- sliced and pitted (1/4 cup)
-    1 Lime/lemon depending on preference
-    Feta (1/3 cup)
-    Sundried tomato- sliced (1/3 cup)
-    Chorizo- sliced (1/3 cup)
-    Spinach- chopped or baby leaves whole (handful)
-    Spring onion- finely sliced (1/4 cup)
-    Fresh chilli - to garnish
-    Pesto- 1 tbsp

1. Bring a pot of water to boil- add spaghetti, once cooked drain and stir through pesto
2. In a seperate frying pan,on medium heat, use small amount of coconut oil to moisten pan, add sundried tomatoes, olives, chorizo, and juice from 1/4 of lime/lemon, stir through until chorizo and sundried tomato start to crisp at the edges.
3. Add spinach and stir until lightly cooked (steamed) but still green
4. Remove from heat and stir through feta
5. Plate up the spaghetti and add topping mixture
6. Add spring onion, drizzle of lemon/lime juice, and chilli to garnish
