A snack or breakfast to get the day started. Easy to make, quick to bake and full of gains. Enjoy alone or with butter and honey!
1 1/5c Bran
1/2c Coconut sugar
1/2c Melted coconut oil
2T Apple syrup
1/3c NZP Whey protein
1t Baking soda,
1t Baking powder
½ c Walnuts
Preheat oven to 180oC and grease a muffin tray.
In a large bowl, mix together buttermilk and bran.
In a separate smaller bowl, mix together egg, coconut sugar, coconut oil, apple syrup and vanilla together until well combined.
Add small bowl ingredients to large bowl and mix.
Sift in flour, protein powder and baking soda, baking powder and salt and fold mixture.
Fold in Raisins and walnuts.
Spoon mixture into muffin tray and bake for 20mins or until they spring back when lightly pressed.
Enjoy fresh or keep for up to 1 week!
