Paleo Choc Muffins

Do you love muffins? How about a freshly-baked, chocolatey, fluffy muffin that’s healthy AND satisfying? These scrumptious paleo chocolate muffins are so simple to bake and will be ready to eat in less than 30 minutes. Win!


  • 2 Scoops NZProtein Beef protein
  • 1/3c Coconut flour
  • 2T Cocao powder
  • 1t Cinnamon
  • 3/4t Baking soda
  • 3/4t Baking powder
  • ¼t Salt
  • 1/3c Nut or seed butter (I used chocolate hazelnut butter)
  • 3 Bananas, mashed
  • 3 Eggs
  • 1/4c Coconut oil, melted
  • 1t Vanilla essence
  • 1/2c Dark chocolate chips

  1. Preheat the oven to 180oc and line grease a muffin tray.
  2. In a bowl, mix coconut flour, protein powder, cocoa powder, salt, baking soda, baking powder and cinnamon.
  3. In a high speed blender, blitz together the nut/seed butter, bananas, eggs, coconut oil and vanilla until smooth.
  4. Pour the wet ingredients into the bowl and mix together until no lumps remain.
  5. Add in the chocolate chips and stir through.
  6. Pour the batter evenly into the muffin tray.
  7. Bake for 20mins or until once poked, a skewer comes out clean. Enjoy!
