Weetbix Mint Choc Protein Balls

Another high protein weetbix recipe - this time for protein balls. Store in the fridge for up to a week.

Ingredients

  • 4 weetbix
  • 2 scoops NZProtein mint chocolate flavoured Whey
  • 3 medjool dates
  • 2T dark cocoa powder
  • 1t coconut oil, melted
  • Boiling water (3T, or as needed)
  • 1/4c shredded coconut, for rolling

Directions

  1. In a high-speed blender, blitz all the ingredients (besides coconut) together until smooth. You may need to scrape the sides and blend again. You can add more water until it’s reached a sticky, wet mixture.
  2. Roll the mixture into balls.
  3. Roll the balls in shredded coconut.
  4. Enjoy! Store in the fridge for up to a week.
